Oh, the memories I have of candied yams. My mom would make them every year, they are what I look forward to most on Thanksgiving. Thank you for these!
My pleasure! I love yams so much it's kind of sad. I've been eating the left overs from this little experiment for the past day and a half. Send help!
Claire, I've been reading your blog for how many years now and you are SLOWLY, but surely bringing out the chef in me. Or whatever the novice version of a chef is. Which leads me to my questions. Where do I buy vanilla beans? And what do you mean, scrape?
Hey Neuby, I started the same way! I'm still learning :) I've seen vanilla beans at whole foods and my neighborhood grocery (but they're super random), so I'd start there. If you can't track them down, simply add vanilla extract or vanilla paste (start with 2 tsp) to the yams while they puree, and add to taste. Scraping means split the vanilla bean with a small knife, and using the dull side scrape the seeds inside the sliced vanilla pod out. Let me know if you need any more pointers. Hope this helps!
Thanks Claire. (This is Kristin Neubauer, but the way...didn't know my name was going to post as Neuby Fam.) :)Thanks and please wish your whole fam a Happy Thanksgiving. I think of you all often.
